Homemade Chipotle Chicken

Now, I know I have a tendency to slightly hyperventilate over dishes I like, but BELIEVE me when I tell you, you must make this dish!
Doesn’t the above picture just make you want to slather this sauce all over your body, no? Ok maybe thats just me but I’m tellllllllllling you It’s sex on a plate. Good sex too, the type of sex where your hair looks like it didn’t know there was this thing called the hairbrush invented after you’ve finished type of sex. I’ve been wanting to make this marinade for so long now, but it wasn’t until I came across the recipe on Chrissy Teigens blog that I knew I had to make it! I just recently discovered her blog, she doesn’t seem to blog anymore, which is a shame, but she’s hilarious and has so many tasty recipes for you to try so you should definitely check it out. Anyway lets get back to the reason we’re all here, the food!


x1 packet of chicken thighs Chicken
x1 packet of chicken legs
The juice of half a lime
1 cup of Vodka
3 tablespoons of tomatoe ketchup
1/2 tin of the chipotle peppers with the adobo sauce
3 tablespoons of olive oil
sprinkle of salt
3 tablespoons of brown sugar
x4 garlic cloves

Set your oven to 200 C/ 400F/ Gas Mark 6


Ok, so I bought these particular chipotle peppers in adobo sauce from Selfridges foodhall…

Scoop out half of the tin of peppers and sauce and add to a bowl. If you can’t take too much heat maybe only pop in two peppers but honestly once this has been in the oven for an hour it takes away alot of the heat, in my opinion anyway.

It kind of has the same spice rating as the medium sauce from Nando’s (did I really just write that? Yep! Oh whatever it’s true!)

Squeeze in half of your lime…

Then add the vodka….

Wooooooooooooooooooohooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooo! Pour it up, pour it up………. (I don’t get out much)

Add and blend all your remaining ingredients together and that’s it, it’s ready! It smells amazing too by the way!

Next, bathe all your chicken in chipotle and adobo sauce awesomeness…………. If you can, leave this to marinate for at least an hour or two before popping into the oven for one hour and thats pretty much it.

So easy, so simple, whats not to love!

So, while your chickens cooking away nicely in the oven, kick back and relax, your choice of drink should be this ,rum and ginger beer or ‘Ginger Jacks’ as I like to call it. Trusssst me it’s the stuff!

I’m telling you I’m pretty much addicted to this marinade now, you can smother this stuff on anything too, pan fried king prawns, slow roasted pork, your body? The possibilities are endless! I also ended up making a second batch with the remaining ingredients and I’ve stored this in the freezer for when my next chipotle craving kicks in, ooooosssshhh happy days!
